Can You Freeze These Muffins?

Yep! This is one of the reasons this is such an awesome “make ahead” recipe! You can make these anytime and put them in the freezer to take out whenever you may need them. Just let the muffins cool completely. Then individually wrap them in aluminum foil and put them into a freezer bag. I like to put the date I baked them on the bag. They should be good for 3-4 months.
Simply take them out the night before you want to eat them. Or, you can wrap them in a damp paper towel and put them in the microwave for 30 seconds!

Can You Use Frozen Blueberries When Baking Muffins?

We love to use fresh, juicy blueberries in our recipes. But, depending on where you live and what time of year it is, this can be hard. If all you can get your hands on is frozen blueberries, don’t worry at all! It will just take a little prep work.

First, rinse your frozen blueberries in cold water until you don’t see as much blue color going down the drain. Then, simply pat them with some dry paper towels. Then you are ready to bake!

Notes, Tips and FAQs

  • CAN YOU USE WHOLE WHEAT FLOUR? – You can sub out half of the All Purpose Flour for Whole Wheat Flour. I wouldn’t completely take away all of the “white” flour, but going half and half can work if you want to reduce your white flour intake.
  • CAN YOU MAKE THIS RECIPE GLUTEN-FREE? – Yep! Just add gluten-free flour to make this compliant with gluten free diets.
  • WHY ARE MY MUFFINS STICKING TO THE PAN? – Make sure you spray the muffin pan with Cooking Spray! Or, better yet, use muffin paper liners.
  • You can substitute the white sugar for 1/4 cup of honey and 1/2 cup of brown sugar.
  • HEALTHY MUFFINS? – Another way to make these Banana Blueberry Muffins a little healthier is change the milk. You can use any sort of milk for this recipe. Skim, 1%, 2%, Almond Milk, Vanilla Almond Milk, Soy Milk, etc..
  • DON’T OVER MIX – You really want to just mix it until the dry ingredients are just combined with the wet ingredients. This is how you can ensure that fluffy, most result you are looking for.
  • ADD CHOCOLATE – Ummmm…. add chocolate chips! Right? You can never go wrong with adding some chocolate chips. I just wouldn’t add to many to compete with the blueberries.
  • MUFFIN TOPPINGS – There is nothing wrong with adding a topping to your muffin! You can sprinkle some sugar on top. Add a streusel before baking or add a glaze! Check out some easy muffin topping recipes below!
  • BEST WAY TO MUSH A BANANA? – Nothing fancy, we just use a fork!

EASY STREUSEL TOPPING RECIPE:

  • 1 CUP FLOUR
  • 1/2 CUP GRANULATED SUGAR
  • 4 TBSP MELTED UNSALTED BUTTER

Mix ingredients together and put on top of muffins before baking.

EASY GLAZE RECIPE:

  • 1/2 CUP CONFECTIONERS (POWDERED) SUGAR
  • TBSP MILK

Mix together in small bowl and drizzle over muffins after they have cooled.

Just put these in the oven and they smell delicious. However, I was concerned about calories in each muffin. I had made 14 instead of 12. The total calories with all ingredients is 2345 divided by 14 is over 167, not 86 as the site states.
Good to know for those calorie conscious

Thanks so much for the comment! Yes, Muffins freeze and reheat great! Just make sure they are fully cooled and wrap them tightly in aluminum foil, freezer wrap or both. I usually just take mine out of the freezer the night before I’m planning on eating it and thaw it at room temp.

I will be filing this under my eggless recipes. My daughter has a severe egg allergy. I decided to try this since it only required one egg. I omitted the egg and I did not change anything else. They came out perfect.

Y’all I am just now trying this – they are in the oven! I substituted regular flour with Kodiak power flower – 10 g of protein per 4th of a cup! I also substituted some of the flour for rolled oats and flaxseed. I added a dash of vanilla and I also added some walnuts and almonds. Oh – I substituted the syrup with honey and I plan to sprinkle the top with a little crystallized sugar!

FAQs

Why is my banana muffin hard? ›

Avoid overmixing your wet ingredients with the flour mixture as this will result in more dry, dense muffins instead of muffins with a moist crumb. Follow the other tips above for using overripe bananas for the best guarantee of moist muffins!

Can you use frozen blueberries in muffins? ›

Fresh OR frozen blueberries work great in this blueberry muffin recipe. What is this? If using frozen berries, don't thaw first! Toss the blueberries with a teaspoon or two of flour before gently stirring them into the batter.

What to add to muffin mix to make it moist? ›

Sour Cream or Plain Yogurt: Sour cream helps keep the muffins extra moist. If needed, you can use plain yogurt instead. Sugar: Use granulated sugar to sweeten these muffins. I used to use some brown sugar and some white granulated sugar, but brown sugar weighed the muffins down.

How to doctor up banana muffin mix? ›

Mashed bananas provide a spongey consistency in a muffin mix. Cinnamon, sugar, and robust ground cloves, along with butter and flour, blend into a treat that's the best of both worlds. Try adding raisins and dried cranberries to the muffin mix, along with a cup of chopped walnuts.

Can I add a banana to muffin mix? ›

Yes! If you are going to add bananas, we recommend adding no more than 2 mashed bananas and omitting the water, since the banana will add moisture. To prepare: Whisk eggs, then add in oil and mashed banana.

How to keep banana muffins moist? ›

If muffins are left exposed, the moisture starts to leak from them and they dry out. To store muffins up to 4 days, line an airtight container or zip-lock bag with paper towel and store the muffins in a single layer. Place another layer of paper towel on top of the muffins as well.

Why did my blueberry muffins turn blue? ›

Muffins, scones, cake, and coffeecake are quite another, frozen berries bleeding juice into batter to turn these golden-hued beauties a sickly shade of purple-green. This doesn't have to happen, you know. There's a simple solution. Rinse your frozen blueberries before you use them.

Do you drain blueberries for muffins? ›

If you don't drain them, you'll end up with blue-colored muffins! Also, draining helps keep excess liquid out of the batter.

Why did the blueberries sink in my muffins? ›

There are a few reasons: Chunky ingredients are denser and usually heavier than the batter—so down they go. The heavier the ingredient, the more it will sink, until you have a nice bottom crust of blueberries instead of evenly distributed, gooey berry goodness.

Should I coat blueberries in flour for muffins? ›

Coating the berries with a spoonful of the recipe's dry ingredients prevents sinking. Instead, it helps the berries adhere to the batter, keeping them well distributed throughout the muffin. And if you're using frozen blueberries, the flour will also help minimize how much the berries bleed into the batter.

Can I use milk instead of water in blueberry muffins? ›

Can I use milk instead of water to make muffins? We recommend using water; however we know that some Makers prefer to use milk to make muffins. Using milk can change the texture of the muffin to be more like a cupcake.

What happens if you stir muffin batter until smooth? ›

If you mix it to the point that it is totally smooth, you activate the gluten in the flour, and that makes the muffins less tender. The basic procedure is to stir the dry ingredients together in a large bowl, then beat the liquid ingredients together in a medium sized bowl.

How do you get moisture back in muffins? ›

One of the easiest ways to revive stale muffins is to warm them in a hot oven. First, spray them with water or pat them with a damp paper towel. Meanwhile, preheat the oven to around 350 degrees Fahrenheit. Wrap each muffin in aluminum foil and reheat the whole batch for up to 10 minutes.

How to get domed muffins? ›

Make sure you use the correct temperature. I suggest baking your muffins at 400 F. I know most muffin recipes (including the ones I have used previously) all tell us to preheat our ovens to between 325-375 F. That heat range is just not enough.

Why are Bakery muffins so much better? ›

The best bakery-style crumb muffins start with cake flour

Cake flour is more finely ground and has less protein, which leaves the muffins with a fine, light crumb and soft texture. Using cake flour is an easy way to avoid heavy, dense muffins even if you end up stirring just a bit too much. What is this?
