Grilled sandwich, also known as Bombay sandwich is an Indian style sandwich with green chutney and aloo/ potato combo. With the Indian spices, it is perfect to suit our taste buds.

Aloo veg grilled sandwich is perfect for lunch box, both kids and adults. You can make it as a tea time snack too.

I make this sandwich very often for breakfast, but not with Indian touch, that is no green chutney, aloo (potato) or chaat masala.

But wanted to try this Mumbai grilled sandwich with green chutney and aloo for long time.

So tried and found it a lot tasty and quite a change for the regular pizza sandwich I make. I wanted to post more sandwich recipes here in my blog, so I thought of trying and posting this grilled sandwich.

Ingredients

Here are the ingredients needed to make.

Potato - Aloo as it's widely called, is the highlight of this Indianized version. Usually boiled and sliced potatoes are used.

Cheese - Add loads of grated cheese. They use amul cheese. You can use cheese slice too. Processed cheese works, you can try mozarella or cheddar cheese too.

Vegetables - Sliced Onion, tomato and cucumber works best combination. Some add capsicum too.

Chaat masala - The magic ingredient that takes the sandwich to another level. It is available in all Indian stores.

Butter - Slather generous amount of unsalted butter for best taste and a crispy golden crust.

Ingredients

  • 4 Bread slices
  • 1 Onion
  • 1 Tomato
  • 1 Cucumber
  • 1 Boiled potato
  • 4 teaspoon Green chutney
  • 1 teaspoon Chaat masala
  • ½ teaspoon Black pepper powder
  • 2 Cheese slices
  • Butter - As needed

Instructions

  • Slice the veggies and gather all the other ingredients firstly.

  • In between the two slices, spread green chutney, butter if desired.

  • Place a slice of cheese and arrange the veggies and sprinkle pepper, chaat masala (a lot to balance taste) over it.

  • Lastly sliced potatoes and close the sandwich with other slice of bread.

  • I like to add some extra dose of sweet chutney or tomato chilli sauce for a sweet touch. It is optional, but highly recommend for balance of taste.

  • Place it in a greased sandwich maker and cook for 2 minutes or as per the sandwich maker’s instructions.

Notes

  • I fold the cheese slice and keep it towards center of each piece, so that it doesn't ooze out easily. Also grated frozen mozzarella oozes out less.
  • Clean the sandwich maker as soon as you take out the sandwich and when hot to take out easily the oozed out cheese if any.
  • Make sure to grease with generous butter.
  • No specific recipe for this, you can skip any one or two, still tastes great!
  • I made it in my sandwich maker, don't worry if you don't have one, you can make it in tawa too. You can also use the griller plate if you have it.

Step by step

1. Slice the veggies and gather all the other ingredients.

2. In between the two slices, spread green chutney, butter if desired.

3. Place a slice of cheese and arrange the veggies and sprinkle pepper, chaat masala over it. Make sure to add enough for avoiding bland taste.

I like to add sweet chutney or tomato ketchup/ tomato chilli sauce for a sweet touch.

4. Lastly layer the sliced potatoes and close the sandwich with other slice of bread

5. Place it in a greased sandwich maker and cook for 2 minutes or as per the sandwich maker’s instructions.

    I tried my hand at making veg grilled cheese sandwich, Ran into a bit of a problem:
    1. Post grill, the sandwich sticks to the toaster, why so?
    2. I used grated cheese, after a couple of toasts the vegetables inside got soggy and lost all the crunch,
    could you help me out here? This is one of my favorite snacks! 🙂

    Grease the sandwich maker well with butter or oil before placing the bread. Also do not use sharp knife to scrap the stuck remains which damages the non stick coating and makes it more sticky.
    Do not place the sandwich before the sandwich maker gets heated up. If you heat the sandwich maker with the sandwich. place it after its fully hot.

    Hi raks, you really rocks. I have become great fan of yours. I wanted to try lot of sandwich dishes, but have a doubt. What s the difference between sandwich maker(the one which you have used in this recipe) and grill maker(the one which you have used in chocolate sandwich)
    . Which one is the best, what can I buy??? What s the difference???

    The one I have used here gives a packed sandwich while the other one just toasts with the lines over it and sides will be open.
    I would suggest you to buy the one with interchangeable plates. Very handy and worth buying.
