Omelettes or omelets, depending on where in the world you are, are a lovely meal!

They're so versatile, you can make them as big or small as you like, add whatever fillings you like and eat them at any time you like!

We thought we would share our favorite omelette recipe with you today.

We know our scrambled eggs recipe has been so very popular, so either everyone is making breakfast now if many are staying at home, or you all seem to have lots of eggs and want a variety of recipes to try!

For this recipe, I have added bacon, spinach, mushrooms and cheese.

You can choose if you'd like to add any of those, or perhaps you want to add some other things such as ham, chopped tomato (make sure you use fresh tomatoes and not canned!), smoked salmon, or other ingredients you have in your fridge.

The main thing to remember is the omelette cooks very fast, so what ever ingredients you add, make sure they're pre cooked or, like spinach, cook in a matter of seconds.

You can of course just make a simple egg omelette, with no other fillings.

Whatever you decide, you can eat this on its own, or serve it for breakfast or brunch with some bread fresh from the oven. Or supper, when you want something light.

Why is my omelette rubbery?

Eggs tend to go rubbery if you have overcooked. With omelettes, it's best to leave a little runny bit inside before you turn it in half. the egg will continue to cook for a while after you have taken the pan off the heat.

Why do my omelettes always stick?

You need to make sure you add oil to the pan. If you have a nonstick pan, that is the best!

Why does my omelette break?

Adding too much filling can be a common cause. They can also break if you have cooked it too much so it isn't as soft and flexible to flip in half.

Make sure you are turning your omelette over whilst it still has some runny parts to it.

Ingredients

3 Eggs, beaten
1 teaspoon Sunflower Oil
1 teaspoon butter
1 Rasher Bacon, chopped and cooked
2 Mushrooms, sliced
Handful Fresh Spinach Leaves, washed
2 Tablespoons grated cheese
Salt and pepper to taste

Instructions

Beat eggs in a bowl. Add salt and pepper to taste.

Wash the spinach leaves and pat dry.

Add the sliced mushrooms and bacon to a small frying pan and cook. Remove and drain on kitchen paper.

Wipe the pan clean and add the oil and butter.

Set over a medium to low heat until the butter has melted and starts to foam.

Add the eggs to the pan and start tilting the pan round in circles so the egg reaches the side and covers the surface of the pan.

Let the mixture cook for about 30 seconds then take a spatula and run a cut through the center of the egg, and tilt the pan again so the uncooked egg runs into the cut.

Let it cook for around 15 seconds as it is. You should still see some slightly runny parts on the surface.

Then add the mushrooms, bacon, spinach and grated cheese.

Arrange these ingredients on the top of the omelette and carefully fold the omelette in half using a spatula.

Gently push down the omelette with the spatula and then slide onto a serving plate.
